The polysaccharide fractions were successively extracted with water, aqueous solutions of hydrochloric acid (pH 4.0) and 0.5% aqueous of ammonium oxalate from Viburnum sargentii fruits. All polysaccharide fractions included the pectic polysaccharides with significant regions of 1,4-α-D-galacturonan. The composition of polysaccharide fractions was heterogeneous. The pectic polysaccharides from V. sargentii were shown to be a mixture of polymer homologues, which differed in the content of the galacturonic acid residues. The fractions were found to contain protein. Protein was supposed to be partly linked to the sugar chains of the carbohydrate macromolecules.
