The article is devoted to the Interaction and phase transformation of polysaccharides. It investigated such interaction of polysaccharides, for example, chitosan (ChZ) with Na-carboxymethylcellulose (Na-CMC) when mixing their aqueous solutions in a shear flow. Experiments were also carried out in a system of coaxial glass cylinders (the inner cylinder is a rotor) of a specially assembled "Rheoptimmeter", which makes it possible to study the phase transformations of polymers in a shear flow of a mixture using rheological and polarization-optical methods.
