The purpose of the researches was to approve arabinogalactan (E-409) as preservative in thecourse of processing the production of maral breeding in biosubstance. For the achievement of this purpose the task was set: to study the possibility of using arabinogalactan in the course of production of hydrolyzates from tails of marals at the decrease in concentration of preservatives - lemon and ascorbic acids. As material for microbiological researches water hydrolyzates served. For the definition of an optimum dosage of entering arabinogalactan into a hydrolyzate from production of maral breeding out a number of experiments with various concentration of E-409 (2, 4, 6, 8, 10, 20 and 30 %), in 50 ml of hydrolyzate were made. Further the researches on the combination of arabinogalactan with preservatives of lemon (E-and ascorbic (E-300) acids were made.
