The new data on the protein composition of milk cows meat breeds which vary on this indicator. The identified well expressed particular shared between the two breeds: limousine and simmental, the comparison of it with the gereford. Limousine milk cow is characterized by elevated levels of total protein, which is mainly concentrated whey protein. Simmental milk, by contrast, is also of casein and whey protein is low.
