Dynamics of water and oil contents in ripening fruits of Chinese magnolia vine (Schisandra chinensis Turcz.)

We studied dynamics in changes of water content and lipids accumulation in pericarp and seeds of Chinese magnolia vine during fruits maturing. We established oil accumulation in each of mentioned organs was conducting with different moisture of tissues. Moisture of fruit pulp reaches 84-85% at the first stages of fruit development, and it is almost permanent during oil accumulation. But in seeds oil accumulates under dehydration up to 36% during the whole maturity period. Oil content in seeds of the ripened fruits was four times higher than in fruit pulp - 24.7 and 6.2%, respectively.
