New data were obtained on the genetic structure of milk proteins in meat breeds. In milk and meat cows were polymorphic, as in dairy cattle, β-to-casein and β-lactoglobulin. They are represented by two alleles a and it turned out that cows milk protein polymorphism beef better expressed than in dairy cattle, because they have equal alleles have a higher rate than in the past.
