Hygienic assessment of the composition of popular juice products

Samples of industrially produced juice products widely available on the Vladivostok market were analyzed at the Federal State Budgetary Educational Institution of Higher Education «Pacific State Medical University», during the 2024/25 academic year. The aim of the study was to assess the hygienic quality and safety of the juices. A detailed analysis of the juice labeling was conducted to establish their compliance with current regulatory documents, which is important for ensuring information transparency for consumers. The national "Honest Sign" system was used for additional verification of labeling data. A qualitative analysis of starch content was an important part of the study, as this component increases the glycemic index of the product, making it potentially dangerous for people with carbohydrate metabolism disorders and undesirable for those monitoring the energy value and composition of their food intake. During the experiment, starch that is normally absent was detected in some samples, indicating the use of unscrupulous manufacturing practices. Additionally, vitamin C and malic acid content were determined by titration, allowing for an assessment of their potential health benefits. Based on the data analysis, consumer recommendations were developed aimed at raising awareness about the quality, safety, and appropriate selection of juice products. This work contributes to the development of a conscious approach to juice consumption and to raising quality control standards in the market.
