The products of oil seeds processing - meal cake and oil cake - are the valuable protein products containing essential amino acids so necessary for human and animals. There is presented a review of the wellknown and principally new methods of selection, separation and identification of vegetable proteins in the most important oil crops, such as sunflower, rapeseed, soybean, etc. We considered the ways of a rational use of protein components in oil crop seeds. Usage of exact and highly efficient methods of protein quality control is obligatory to increase value of nutritive base of vegetable protein. We specified dependence between biological value of agricultural products and amino acid composition, possibilities and perspectives to increase industrial efficiency at introduction of new technologies of a complex raw materials usage, advantages of vegetable protein in food production. There are stated data on total protein and amino acids composition of oil crops. There are presented results of researches on protein content and amino acids composition in hybrid sunflower seeds which were obtained in the Bulgarian Agricultural University, Kuban State Technological University, Voronezh and Omsk universities.
