Quality identification of the frozen squid of various manufacturers

A significant place in the catch of Russian sailors is occupied by the Komandorski squid, which currently prevails on the shelves of Russian shops. The aim of the work is to identify the quality of frozen squid of various producers ("Malkinsky", "MasterFish", "Wave", "Ryazhskaya RPK"). It was established that the quality of packaging and consumer characteristics of products of the studied manufacturers met the requirements of GOST 20414-2011. However, the marking of squid in all cases was incomplete because of the absence of the sign "Eurasian conformity". Sensory evaluation has established a level of product quality: the samples from the "Ryazhskaya RPK" have good quality, the others have excellent quality. The squid produced by the "Ryazhskaya RPK" has an excess of 3,5% exceeding the norms of this standard. Samples of squid from the producers of "Wave", "Malkinsky" and "Ryazhskaya RPK" had a mass fraction of glaze exceeding the norm by 3 times, by 72,5% and 61,2% respectively, and the temperature in the thickness of production was higher than the lower limit by 6, 7; 4,5 and 6 ° C, which violated the regulatory requirements. The processes of spoilage and deep dehydration in the analyzed squid samples were not revealed. The best in terms of price / quality ratio were samples of frozen squid from "MasterFish". In the content of cadmium and lead, all the squid samples were safe. The number of irreplaceable mineral elements was within the norm. As a result, only the quality of the frozen squid of the trade mark "Dixie" from the enterprise-manufacturer "MasterFish" corresponded to the requirements of the current standard.
