The article addresses the role of fast-acting yeast for the efficient operation of the baking industry, which is especially important in the Russian Federation given the composition of today’s consumer food basket and food security issues. The readiness of domestic enterprises to use Russian-made yeast is noted. The process of developing a new technology for the production of fast-acting yeast for use on a large scale is considered. The need for such development is emphasized in the context of the import substitution tasks facing the state.
