The high social importance of the milk processing industry and its dependence on raw materials determines the need to develop innovation technologies for reconstitution of dried milk that ensure the production of a required range of milk products and their quality level according to consumer preferences and regulations. The proposed introduction of ultrasonic treatment contributes to the goal achievement, namely recoursesaving technology for processing milk raw materials and the reconstituted products quality formation after milk processing.
