Lactic acid bacteria are the dominant group of microorganisms in fermented meat and fish products. It is also known that lactic acid bacteria have beneficial properties for human health, for example, with regular use, they contribute to improving human immunity, promote better absorption of food, reduce the level of cholesterol in the blood. Their technological properties are also well known: they are able to synthesize lactic acid and bacteriocins, which can improve food safety performance. In addition, as a result of lactic acid fermentation, the content of vitamins in food increases. In this regard, directed selection of microorganisms to create bacterial concentrates intended for use in the food industry, is an object of great interest. The paper presents the results of studies of the cultivation of a strain of lactic acid bacteria using a biotechnological activation method. The results of experimental studies showed the possibility of cultivation a strain of lactic acid bacteria Lactobacillus sakei LSK-104 on a medium based on whey.
