Research of the quality of solid pasta products wheat varieties

The article presents the results of assessing the quality of pasta made from durum wheat sold by Sodexo LLC. The samples were subjected to organoleptic and physicochemical analysis. Based on the results of the analysis, it was found that each of the selected samples fully complies with the requirements of regulatory documents. Based on the research, practical recommendations were made.
