Investigation of the potential of caviar production waste as a biologically valuable secondary raw material

The article presents the results of a study of the potential of caviar production waste, carried out during the industrial processing of salmon fish. The prospects for further use of this secondary raw material are proved. It sdudies general chemical composition, amino acid composition of proteins and fatty acid composition of waste lipids formed during the punching of salmon fish ovaries. The results of experimental studies confirm their biological value. In order to increase the efficiency of the technological process and increase the energy value of secondary raw materials, it is advisable to introduce its pre-treatment, consisting in dehydration. Rational modes of this technological operation are established. The biological value of secondary raw materials has been clarified by determining the amino acid composition of the protein, adjusted for its digestibility. Biological efficiency is defined as the quantitative ratio of polyunsaturated and saturated fatty acids of lipids. The result of scientific research is proves the expediency of preliminary dehydration and subsequent use of caviar production waste as a valuable secondary raw material for obtaining biologically valuable products.
