Research of the production process of a fermented milk product from reconstituted milk enriched with biologically active supplement

In order to minimize the cost of producing reconstituted milk with fat mass fraction of 1.5%, skimmed milk powder, whole milk powder and drinking water in certain ratios were taken as raw materials according to the calculations. The calculation of formula components for reconstituted milk was based on the data of the required component composition and type, chemical composition and wholesale price of raw materials. Obtained data make it possible to characterize MCO and MSC as raw materials with good wettability, since the duration of complete immersion of product particles in water does not exceed 30 seconds, and is 26 s and 23 s, respectively. The solubility index of MSO is established, which is 0,14 cm3 and that of MSC is 0,18 cm3. Based on the data obtained, the authors conclude that the studied milk powder belongs to instant products and can be used in the process of recovering milk intended for fermentation. They carried out production tests of the adopted technological solutions. The fermentation process of the reconstituted milk lasted 6 hours until the acidity increased to 85-90 °T. In this case, the resulting clot had an effective viscosity of 6-8 % higher compared to the control sample. In terms of organoleptic characteristics, the finished fermented milk product meets the requirements of regulatory and technical documentation.
