The study of the thermophysical properties of wet materials allows us to justify new materials-processing technology according to its changes and improve the technical characteristics of the devices for its implementation. The purpose of this work is to study the regularities of the change in the thermophysical characteristics of moist material by the quasi-stationary heat flow method, at which the external temperature and the thermal diffusity at the interface between heat exchange of the material and the medium is T = const. Based on the experimental values of the rate of cooling and heating, constructed in a semilog plot, empirical dependences of the wet material (casein) on humidity and temperature are obtained. The specific heat of wet materials was determined similarly and the empirical dependence of the heat capacity of casein was given. Based on these studies, a generalized empirical dependence of the thermal conductivity of casein at different values of moisture boundaries, 8.25% ≤ ω C
