Change of milk protein composition in cows of Tatarstan type in case of mastite disease

In case of mastitis disease in cows, the milk, protein composition, is that significantly changing characterized by a decrease of total protein content ( to 40%) and casein (to 65%), however, the concentration of whey proteins increases to (60%). The biggest changes are generally in the main proteins of milk: as1 -, в -, к -, as2 - caseins, blood albumin, immunoglobulin, в - lactoglobulin, a - lactalbumin, in the latter two proteins the changes are of a counter-directional nature. As a result of of these changes in the clinical form of mastitis milk of the casein group passes into an abnormal albumin group with a ratio of caseins and whey proteins 45:55%. This indicator can be the main criterion for assessing the condition of the udder and the quality of dairy products in mastitis. Based on the results of the research, it may can also conclude that the treatment of mastitis in cows not fully completely restores the original structure of milk protein in a healthy udder, as the decrease of total protein, casein and whey protein are unchanged, however, the milk has a normal protein structure with a ratio of casein and whey protein 79 : 21%. Studies have also shown, that in the disease of one quarter of the udder, milk protein composition in healthy quarters have not affected.
