Indices change of electrophoregram in the extract of a minced pork at different storing modes

As a result of our research it was established, that the use of different storing modes cause an intensive growth of peak-mucines, which are quickly defragmented even in the case of a short storage. A striking evidence of this peak can serve as a diagnostic marker in the ascertainment of quality and safety of a minced pork. In a minced pork a consecutive rising of cytolysis processes take place, a deficient antienzyme activity of cytosol is most likely observed, and it enables to consider a minced pork to be a perishable product. Reasoning from the results of this research it should be mentioned, that at a breach of storing modes a minced pork cannot be recommended for food.
