The article presents data on the study of biological and biotechnological properties of individual strains of probiotic microorganisms (lactobacilli and bifidobacteria) in order to create new effective consortia. Selection of strains for co-cultivation is carried out according to the principle of biocompatibility using a drip technique. The research reveals features of inter-bacterial interactions with both representatives of its kind and with other microorganisms. The article studies the biotechnological potential of probiotic microorganisms taking into account the proteolytic activity and adhesive ability of strains. Groups of microorganisms (Lactobacillus curvatus LCR-111-1, Lactobacillus plantarum 8RAZ, Lactobacillus fermentum 44/1 and Lactobacillus paracasei k-406) promising for co-cultivation were isolated. The obtained data can be used in the creation of new functional products and biologically active additives.
