Study of natural food antioxidants of CO2-extract Mentha piperita L.

In this study, the biologically active substances of the extract of CO2-Mentha piperita L., which contains compounds that can increase the shelf life of food, including those from raw materials of animal origin were identified. The extract was obtained by means of supercritical fluid extraction. Also, using HPLC-MS/MS analysis, biologically active substances in the extracts of CO2-Mentha Piperita L were identified. 42 biologically active components were revealed. 9 new compounds were discovered (scopoletin, ferulic acid, stearidonic acid, cirsimaritin, 15,16-dihydrotanshinone, isotanshinone IIA, alphitolic acid, isorhamnetin-3- (6-O-feruloyl) glucoside and 5-desmethylnobiletin). The results of the study showed that the extract of CO2-Mentha Piperita L. has a high content of flavonoids, which makes it possible to recommend supercritical extracts as a source of natural antioxidants for use in the food industry.
