The article analyses the core names of culinary found in the texts of national literary-poetical fund of Russian and English languages. The article discusses culinary dishes as inherent in the national culture. The description of the core names of culinary and – through them – dishes is given. The systematization is based upon the following principles: 1) level of literary integration of the name of culinary; 2) proverbial principle of the name of culinary; 3) presence / absence of limitations (social, regional) in the use of the corresponding dish.
