The article provides a review of scientific research aimed at developing methods for extracting carotenoids, including lycopene, from secondary resources of tomato processing. It has been shown that, in general, in the extraction of carotenoids, including lycopene, from the secondary resources of tomato processing, various methods of drying and grinding the raw materials are used, and then the extraction of biologically active substances from it.
