The article discusses the latest development of an energy gel with the additive "fucus", which has a useful number of properties and is convenient for use by people during high physical exertion. The relevance of this work lies in the fact that the gel contains algae, which not only nourishes the body, but also does not cause thirst after consumption. Fucoidan polysaccharide, which is part of fucus, has high biological activity - antiseptic, immunomodulatory, blood thinning and many other properties. The innovative technology reveals fucus cells without the use of high temperatures and additional chemical agents, thus, the entire range of biopolymers, vitamins, macro- and microelements vital for the restoration and normal functioning of the human body becomes available [1]. Thus, the latest technology of algae processing has been developed, which can be widely used in Russia for the production of energy gels for athletes.
