On the issue of rational use of intestinal raw materials for food purposes

This article presents research on improving the efficiency of slaughter products on the example of the Galloway cattle breed of the Trans-Baikal Territory. During the study of intestinal raw materials, its fractional composition was established, which is characterized by a low content of water- and salt-soluble proteins, which provide the main functional and technological properties of raw materials. The total yield of the main groups of intestinal raw materials from the head of Galloway cattle is 11.9 kg, which indicates a real possibility of increasing the use of intestinal raw materials for food purposes.
