The article presents the results of studying the effect of storage parameters on the natural loss of mass of carrot taproots of the variety Abaco. The dependence of the magnitude of natural losses during storage on the temperature and relative humidity of air in the storage facility has been established. On the basis of the revealed regularities, a mathematical model and software have been developed, which allow predicting the shelf life of carrot taproots and optimizing storage parameters for extending the shelf life.
