The article considers the possibility of studying the storage process of agricultural raw materials of plant origin. Rational nature management, recognized throughout the world as the dominant economic development trend, suggests the most complete use of plant raw materials consumed by humans. For example, in the nutritional structure of people in most countries, plant proteins predominate over animals. In Japan, this ratio is 78,3 and 21,7; in Ukraine - 72,3 and 27,7; USA - 65,3 and 32,9; Great Britain - 61 and 32,4; Germany - 65,3 and 34,7; France - 60 and 40; Canada - 68,4 and 31,6; China -87,3 and 12,7; Italy - 74,6 and 25,4. A significant contribution to the solution of this problem is made by the proper storage of collected agricultural raw materials at the stage of preparing it for processing. Given the significant amount of edible roots, grains and seeds in food plant raw materials, it becomes clear that food producers are interested in the conditions and modes of its storage. Modern storage facilities used for these purposes are equipped with various means to provide the necessary heat and humidity conditions and even control the composition of the environment in the premises of the direct placement of stored mounds of root crops, grain and seeds. Thus, the possibilities of analytic assessment of the storage conditions of embankments of various types of agricultural raw materials are highly relevant.
