The article discusses an apparatus for cooling cottage cheese type OTD. The disadvantage of this device is insufficient productivity, and with an increase in the rotational speed of the displacement drum, the cottage cheese is not cooled to the required temperature. In the modernized OTD-type cooler, the displacement drums are made hollow, inside which there is a hollow shaft connected by a branch pipe to the displacement drum jacket. The hollow shaft design provides two separate flows, respectively, for the entry of the refrigerant into and out of the jacket of the drum. The proposed modernized curd cooler allows increasing productivity and intensifying the curd cooling process.
