The food and processing industry in Russia is one of the strategic sectors of the economy, designed to ensure a sustainable supply of the population with the necessary high-quality food. At present, there are the following problems that hinder the development of the bakery industry: physical wear and tear of fixed assets; low profitability of production; dependence on foreign suppliers due to the lack of domestic bakery equipment. Modernization of the bakery industry will allow expanding the range of manufactured products, increasing the nutritional and biological value of bakery products, and reducing the specific consumption of energy resources per unit of manufactured products. The uniform distribution of the components in the mixtures in the bakery is achieved by intensive mixing. By mixing is meant a mechanical process in which the components, initially separate, form a homogeneous mixture. The more evenly all components are distributed, the higher the degree of homogeneity of the mixture. The article proposes a modernized flour mixer, which excludes the return of flour to the same machine for re-mixing, as well as intensifying the flour preparation process and improving the quality of the finished product.
