The article deals with a dough mixing machine with a rolling bowl. Its disadvantage is the uneven kneading of the dough throughout its mass (intensive kneading is carried out at the level of the blades, i.e. the upper and intermediate layers of the dough are not kneaded enough, which ultimately reduces the quality of the product and reduces the productivity of the machine). Also, the additional rotation of the bowl requires the installation of a drive for it, which leads to an increase in energy costs and the total mass of the machine. In addition, there is no uniform supply of ingredients, which reduces the quality of the product. To eliminate the above drawbacks, the mixing of the dough in the modernized machine occurs due to the rotation of the shaft of the screw and the mixer in opposite directions. The auger creates a circulating flow, eliminating stagnation of the dough in the middle of the bowl, and the agitator kneads the dough, which ensures high-quality mixing of the dough during kneading and increases the productivity of the machine. Thus, the proposed design of the dough mixer allows for fast and high-quality dough kneading with a significant improvement in reliability.
