In clause(article) the basic directions of monitoring of quality and safety of foodstuff in the Samara area and examples of practical application of his(its) results are submitted. By results of laboratory researches of 32258 tests of food raw material and food stuffs the most significant is allocated in the epidemic attitude (relation) production: dairy, confectionery, fish.
