Monitoring of the quality of raw cow milk produced in the agricultural enterprises of the Republic of Tatarstan

The purpose of the research was to study the quality of milk in agricultural enterprises of the Republic of Tatarstan. In the course of the research, physico-chemical properties, microbiological parameters, inhibitory and neutralizing substances were determined. The analysis of obtained data revealed that during the analyzed period the milk of cows of all farms under study according to the content of mass fraction of fat, mass fraction of protein, acidity, density, purity group corresponded to the normative documentation. The high content of somatic cells may be a consequence of decreased immunity in increased milk productivity of cows, low sanitary conditions of maintenance and diseases of cow mammary gland.
