Atomic emission spectrometry is a valuable and progressive method of qualitative and quantitative analysis, which is relevant to use in studying the mineral profile of plant materials in the development of food and biologically active food supplements, as well as functional food products. Among the plant materials with a high biologically active effect, various types of rose hips (Rosaceae) and hawthorn (Crataegus) are effective, which are actively used in the food and pharmacological industries. The conducted studies of the mineral composition on powders from the fruits of rose hips in May and hawthorn common, dried by convection and vacuum methods, demonstrated a reliable difference in favor of vacuum drying.
