This article is concerned with the research of the law of the process of devilry and sale of perishable foods using the example of gourds. The purpose of the study is to define the law of perishable foods “delivery-sale” process functioning in order to substantiate an optimal volume of the batch of goods. In order to develop the “delivery-sale” of perishable foods logistics chain, the article points out the necessity for accomplishing three main tasks: to describe the batch of goods realization process; to define the dependency between demand and item price, to research the cost changing dynamics. On the basis of the regression model, the dependency of watermelons' price throughout the trading season was determined. The order volume change depending on the demand pull and item retail price was analyzed with the help of dynamic programming. The efficiency criterion for optimization of the logistics chain, the last agent of which is a trade enterprise, is proved to be the speed of goods receipt.
