Basic regularities of milk pasteurization using a hydrodynamic heater

Relating to the farms of settlements, family farms and small farms, which currently produce a significant amount of milk in most countries of the world, it is shown the expediency of milk production directly on the farm or in a special milk collection point, organized by dairy farm. It has been concluded that it is future-proof to use small-sized pasteurization units equipped with hydrodynamic heaters for this, increasing the storage time of milk before being sold to the consumer. A number of dependencies have been obtained that describe the technology of milk pasteurization in an installation based on a hydrodynamic heater. The analysis of milk heating process by hydrodynamic action on it under conditions of constant mixing with milk heated to pasteurization temperature with high thermal efficiency is given. Calculated dependencies were obtained to determine the main parameters of such a heater of the studied installation for milk pasteurization: the required heat consumption for milk pasteurization; second heat output by hydrodynamic heater; patterns of heat transfer through the wall of the heater body to the atmosphere; heating temperature of its outer wall; thermal efficiency of hydrodynamic heater; milk pasteurization criterion; the shares carried into it by the heater, holding and regenerator of the pasteurization unit; time of heat treatment of milk in a holding tank; holding capacity and other indicators. It was found that in the design of a hydrodynamic heater, it is necessary to use insulation not only of the heater body, but also of the pasteurization unit's regenerator. Installations of this type have smaller dimensions, are more compact and easy to dissipate the rotor rotation energy into heat when milk is heated to the pasteurization temperature, and have a relatively high thermal efficiency.
