Pasty concentrate from germinated selenium-enriched seeds of Amaranthus has been developed. Studies have found that the seed sprouts of the experimental group against the background of the use of blue light after two days of germination reached a value of 3-4 mm, while the control samples of seeds had sprouts of 3 mm in length on the third day of the experiment. The content of selenium in the seeds of the experimental group after three days of germination averaged 1023 p.g / kg, in the control group- 843 p.g / kg. The obtained data testify to the positive influence of blue light on the growth of seed embryos and the intensification of metabolic processes in plants. Paste concentrate is obtained by hydrobarothermal treatment of Amaranthus seeds. Canned meat "Beef Pate” was developed using pasty concentrate from selenium-enriched seeds of Am-aranthus. It is established that partial replacement of meat raw materials with paste-like concentrate from Amaranthus seeds in the formulation ofpate has a positive effect on the appearance, color, smell, consistency, taste and structure of the product, increases protein content by 6,2%, antioxidant activity by 86% and reduces the amount offat by 8,0%. At the use of 100 g of a product the daily requirement of the adult in selenium to 50% is provided. This allows refering the developed pate to food offunctional purpose.
