Prospects for using Saratov selection Paiza for the production of functional-purpose products

This paper considers the possibility of expanding the resource potential of raw materials with functional properties based on the assessment of the chemical composition of the grain of the Saratov selection of paisa. The objects of the study are the paisa varieties Rosita and Gotika. The studies were conducted at the Center for Collective Use "Symbiosis" of the institution of the Russian Academy of Sciences in the Institute of Biochemistry and Physiology of Plants and Microorganisms (IBPPM RAS, Saratov). It was found that the content of myristoleic and palmitoleic acids in the grain of the Rosita paisa variety is 3 times higher than in the Gotika variety. Acids with conjugated double bonds have an anticarcinogenic effect, and also regulate lipid metabolism in the body. It has been proven that the paisa varieties of the Saratov selection are promising raw materials for the production of functional products.
