Prospects for rational processing of native cattle

This article presents the possibility of using beef and intestinal raw materials of young native Buryat cattle in the production of meat products in comparison with the Galloway cattle breed of Canadian selection. It studies the features of the composition and properties of beef of young native Buryat cattle in comparison with Galloway cattle of Canadian selection. Native Buryat cattle, taking into account the mass of a fresh carcass, had a “low” category and a class and subclass corresponding to this category. Technological cutting of quarters was carried out with the determination of meat yield for minced meat. Due to the low quality of ABS meat, the problem of rational processing of by-products is aggravated. Therefore, one of the effective ways to implement resource-saving technologies is the use of intestinal raw materials for food purposes.
