Selection of optimal parameters of carotenoids extraction from brown algae Fucus vesiculosus and determination of antioxidant activity of the extract

Brown algae are promising raw materials to produce biologically active substances, as they contain many chemical compounds affecting human health. Moreover, algae are cheap raw stuff that does not require complex production and processing technologies, making them an economically profitable source material. One of the promising topics in the food industry is to obtain antioxidants for further use in food production for increasing shelf life and creating functional foods. This article describes antioxidant properties of extracts obtained from the brown algae Fucus vesiculosus of the Baltic Sea. It describes mathematical methods of modeling a full-factor experiment to determine the optimal parameters of carotenoids extraction, with antioxidant properties and derives response surface graphs and regression equation. Prospects of using brown algae for carotenoid extraction have been determined.
