Selection of nutrient medium for obtaining a bacterial concentrate of microbial consortium

The possibility of using rye flour to increase the biomass of microbial consortium is investigated in the article. The consortium was obtained by autoselection of the microflora of kefir yeast and thermophilic lactobacilli. To solve this goal, different doses of rye flour were added to the nutrient medium on the curd whey. It is established that the application of 2% rye flour provides the greatest increase in the optical density of the inoculated nutrient medium during fermentation, and concentration of mesophilic lactobacilli up to 4 1011CFU/ cm3 and yeast of nonfermenting lactose up to 3 108 CFU/cm3. The condition for obtaining a bacterial concentrate provides aggregation of cells and an increase in the adhesive properties of the microbial consortium. The adhesion index of the microbial consortium was 5.4 + 1,1. The study of the qualitative characteristics of bacterial concentrate indicates its high biochemical activity.
