Science has revealed and practice has proved that swine is an excellent raw material for the manufacture of meat products due to its high tenderness, pleasant aroma and taste. It contains a large number of proteins, essential unsaturated fatty acids, vitamins and enzymes. Generally accepted indicators assessing the quality of pork are chemical composition, physical and chemical properties and organoleptic assessment of muscle and adipose tissues. All the above mentioned indicators of pork quality depend on many factors: the type and level of feeding, balanced diets, management conditions, age, etc. The scientific and industrial experiment is made to study the effect of adding different amounts of mineral complex on the basis of L-aspartic acid in gilt rations. Experimental results prove that the mineral complex on the basis of L-aspartic acid has not only a positive effect on the quality of products, but also can improve livestock reproduction without leading to fodder price increase. 10% supplementation of microelement complex (zinc, iron, copper, manganese and cobalt) based on L-aspartic acid in gilt rations is sufficient.
