The article observes analysis of intervening names of culinary in the texts of national literary-poetical fund on the Russian and English languages material. The article discusses the cultural value of the names of culinary. The description of the intervening names of culinary and – through them – dishes is given. The systematization is based upon the following principles: 1) level of literary integration of the name of culinary; 2) proverbial principle of the name of culinary; 3) presence / absence of limitations (social, regional) in the use of the corresponding dish.
