Nitrates and nitrites are one of the most wide spread contaminants of plant products, but recently unscrupulous manufacturers use them in overvalued concentrations and at the production of sausages. The developed express qualitative, semiquantitative and quantitative ways for determination of nitrates / nitrites in meat and meat products are presented in the article.
