Protein-carbohydrate bar technology development from the vegetable raw materials of Baikal natural territory

The article investigates the development of technology for proteincarbohydrate bars based on unique plant materials of the Baikal Natural Territory (BNT). At the first stage, plant materials with high nutritional value and functional potential were selected, the composition of ingredients was optimized to provide a balanced ratio of proteins and carbohydrates. At the second stage, the technological parameters of the proteincarbohydrate bars production process were determined to ensure maximum preservation of the nutrient composition of the plant materials used. The quality and safety indicators of pilot samples of the proteincarbohydrate bars "Cedarsea buckthorn" and "Cedarlingonberry" were studied. The developed technology contributes to the expansion of the range of healthy food products using the resources of the Baikal Natural Territory that meets the requirements of safety, environmental friendliness and sustainable development.
