Currently, tourism is one of the priority sectors of the economy of the Republic of Buryatia. It can be considered as a factor in the economic growth of not only Buryatia, but also Russia. Hiking, expeditions, and rallies are popular outdoor activities. The issues of organizing and providing meals on tourist routes, which require special study and preparation, always remain relevant. Taking into account the high nutritional and biological value of meat and meat products, as well as need for hot meals, it is important to develop long-term storage products provided by the technology, choice and method of packaging. The article presents the results of the development of freeze-dried packaged meat, which can be used to prepare the first and second dinner courses for meals on camping trips. Based on the analysis of modern packaging materials, the advantages of using a water-soluble biodegradable edible film for packaging dried meat are theoretically substantiated and experimentally proven.
