Significant, renewable bioresources of Yakutia are of interest to modern export oriented businesses. However, the difficulty of delivery, the lack of modern technology for long term storage of fish raw materials, make the search for a solution to this problem an urgent task. One of the ad-vantages of the Sakha Republic in this case is the availability of a unique energy resource - natural cold. The use of modern technology of long term, full fledged canning - freeze drying, determined the direction of this research - freeze drying of fish raw materials at atmospheric pressure. The research resulted in a finished product, shelf stable fish chips. The beneficial properties of northern fish are worthy of hitting the table for both the local population and being sent to mainland Russia.
