Development of a technology for obtaining a pastural cavity product enriched by silicone

The article presents the results of the study of using brown rice to obtain a pasty curd product enriched with microelement silicon, which plays an important role in the synthesis of elastin and collagen, maintaining vascular tone and permeability, preventing lipid peroxidation. It is established that rice flour is well dispersed in milk, possessing hydrocolloid properties, and is capable of increasing the water-holding capacity and density of the clot. The optimal dose of rice flour, which helps to reduce the process of acid-rennet coagulation and prolong the shelf life of the product, was determined. The results of the selection of the main technological parameters, the study of the rheological characteristics of the clot, X-ray analysis of the silicon content in the curd product are reflected. As a result of the research, a technology for preparing an enriched product has been developed and production-valuable physicochemical quality indicators have been studied.
