The state of public catering sphere in Ulan-Ude

The public catering market directly depends on the regional features. The article reviews the status of the public catering sphere in the capital of Buryatia - Ulan-Ude. The commonly accepted standard methods of collection and the analysis of information are used in the paper. It is shown that public catering has high growth potential in Ulan-Ude, which is implemented in the process of tourism businesses’ development, increase in number of urban population, forming a culture of eating out. Increase in competitiveness of public catering in Ulan-Ude should be provided with determination of compliance of catering establishments to indicators of the standard existing since 01.01.2016 "Services of Public Catering. Classification and General Requirements "; conducting market monitoring of public catering for the purpose of negative economic impacts smoothing; providing rights of citizens to safety and goods quality, etc. When forming the developed and high technology network of public catering in the city of Ulan-Ude an important role is fulfilled by implementation of the "Technology of Products and Organization of Public Catering" direction (a bachelor degree, a magistracy) in ESSUTM for training of specialists in the food and hospitality industry. The specialists will own modern technologies in the field of production and development of culinary products and the servicing organization. The area of professional activity is connected with production and technological, research activities at catering establishments. It should be noted that public catering is one of the few branches that during crisis does not undergo recession, and only insignificant delay of growth is observed in the sphere.
