The article presents an overview of scientific and technical literature Russian and foreign sources including physical and chemical methods for treatment crop products by way of prevent postharvest diseases, and also to stabilize quality and safety during storage. The presented methods are the newest in the field of crop production and storage and provide prolongation of shelf life. The purpose of the work is to generalize, on the basis of the analysis of scientific publications, modern chemical and physical methods for preventing microbiological damage and increasing the shelf life of crop production. Based on the sources of scientific and technical literature studied, it can be concluded that the chemical and physico-chemical methods of processing plant raw materials are promising for use, but further studies of their safety and the potential for use in industry are also necessary. Combined methods based on chemical and physical effects, as well as methods using non-aggressive chemicals that are capable of inactivating a pathogenic microflora on the surface of the raw material and at the same time not worsening the organoleptic characteristics, are highly effective.
