A fundamentally new method is proposed for immobilizing bifidobacteria when they are directly cultivated in a nutrient medium with an adsorbent, cedar meal.The fermentation conditions of cedar meal with the ferment of bifidobacteria were selected. It has been established that cedar meal has prebiotic properties and stimulates the growth of bifidobacteria. The high survival rate of bifidobacteria immobilized on cedar meal during freeze drying of fermented meal and during long-term storage has been established. As a result of the research, dry forms of immobilized synbiotics containing bifidobacteria as a probiotic and cedar meal, which is a unique natural source of biologically active substances, as a prebiotic are designed.
