The role of antioxidant deficiency of medicinal plants in the creation of functional food products is indicated. The antioxidant properties of plant materials recommended for improving the functioning of the digestive system were studied. High levels of hydroxyl radical activity have been found in caraway fruits; the ability to bind free radicals is high in caraway fruits, phytorastrol and dandelion roots.
